Acid League Wine Proxy
Acid League is so interesting and cool. They are a chef’s experiment and keep innovating new flavors! Acid League makes a wine-like beverage by blending layers of juices, teas, spices, and bitters to be paired with food. Each month Acid League makes three new wines, or what they call proxies.
I tried Proxy no 7, Proust’s Madeleine with flavors of pear, milk oolong tea, vanilla, and roasted coconut vinegar.
While the drink has high notes of acid, it mellows out over time and is a bold complex drink, perfect for meals or dinner parties. I’m so excited to see this!
